Tradicionaly made with three olive varieties

Arbequina

Perfect for making mayonnaise, alioli, vinaigrettes, marinated salmon, carpaccio of seafood, gazpachos, salmorejos and sautéed. Very suitable for taking raw and for pastries.

Fruity and sweet

Bitter and a little spicy. Medium content in vitamin E (tocopherol) and low in polyphenols, providing smoothness and sweetness to the oil. With a slight apple flavor, herbaceous green and sweet flavor.

Frantoio

It mixes the presence of aromas and vegetal flavors with a slight spicy. Recommended to take it raw in salads, meats and fish and to appreciate all its flavor.

Fresh, aromatic and slightly spicy

Taste thin and velvety, although it surprises with a bitter end and an aromatic range with predominance of the intense fruity of olive that in the palate evolves to a gentle bitter tone and closes with more pronounced spices.

Picual

Fantastic for salads, toasts, fried, breaded and battered, slow stews, canned raw or cooked food, ideal for cheeses and macerated meat.

Personality, fruity, bitter and spicy

It is the most widespread variety of the province of Jaén
Its excellent acidic composition, coupled with its content in natural antioxidants, polyphenols and tocopherols, essentially make the Picual variety have a very high oxidation stability. It has a high content of monounsaturated acid and vitamin E of great nutritional importance.
